The Sweetest Holiday Greetings from Ananda Soul

May these next few days warm and embrace your heart and soul – however and wherever you get to spend the Holiday season with.

It has certainly been a year of the paradox, the strange and weird, the rise and the fall, the unusual and the unknown. We were asked to bear witness to what was falling apart while at the same time asked to tend to what was emerging.

Our greatest challenge and opportunity here at Ananda Soul was the transition from a successful local retail business in Ubud, Bali to a thriving and inspiring online brand supported by a like-minded, soulful community that is based all over the world. Thank you again and again and again for carrying us through this year, for believing in us and for receiving us. We can not emphasize enough that with the help and contribution of your generous hearts we were able to support 1.800 Balinese people that suffered greatly from the impact of COVID-19.

As we all know the Holidays are usually a time of indulgence and nurture – which is why we wanted to share a special holiday recipe with you, created by our most favourite Chef Cynthia Louise. 

Raw Granola Cookies

Ingredients

1 cup coconut flour

1/2 cup nut butter of your choice

1/2 cup maple syrup

1/2 teaspoon vanilla extract 

Pinch of salt

1/2 cup of dark chocolate (vegan optional)

1/2 cup of white chocolate (vegan optional)

1/2 cup of pumpkin seeds

1/2 cup of sunflower seeds

1 cup of raisins

1 cup of aats

1 cup of coconut flakes

1/4 cup tahini

1 cup of JOY

 

Toppings: 

50gr of dark chocolate (vegan optional)

50gr of white chocolate (vegan optional)

Any red dried berry - we used Goji berries 

 

Method:

In a food processor pulse till everything is combined and sticky (add a little water if you need them to be more sticky) 

Shape them into 40gr cookies. 

Using a Bain Marie (remark: a bain-marie  is essentially a fancy way to describe a hot water bath) method to melt the toppings. Drizzle the melted vegan chocolate on top of the cookies. 

Cool them in the fridge for a couple of hours. Serve.
